Bit Chips are Sweetapolita's chocolate-based chip format - the brand describes the range as crunchy and chocolaty, built on semi-sweet chocolate chips rather than on sugar alone, which is what gives them their snap and their depth of flavour against a sweet frosting. This is the naturally coloured version of that format, so the rainbow shades come from plant-derived colourants. The broad flat chip shape covers more surface per piece than a jimmie and softens slightly if stirred into frosting a day or two ahead, which is how decorators get a rainbow-bit buttercream.
